It has the colors of Christmas but you don't have to wait until the holidays to enjoy this great tasting salad. Make it a power lunch with a serving of quinoa. 6 bowls
In a large bowl, combine beans, bell peppers and onions. Toss.
Add in orange juice, balsamic vinegar, basil, salt and pepper. Toss, again.
Can be served right away or allow to stand for 20 minutes for a deeper flavor.
Can be made a day ahead.
